My Quest for Goose

Having tried just about all commercially available meats / poultry, the one thing I have always wanted to try is goose. I have heard it is really good, & it was always considered a delicacy "in the old country". Therefore I am trying to get some for shabbos Channukah. Being that they are not commercially available Rabbi Kalmenson has agreed toshecht them for me, now I just need to find live geese. My menu plan is friday night Roasted goose with latkes fried in goose shmaltz, & foie gras for shabbbas lunch. Anybody have any good recipe ideas? Let me know. 

P.S. anyone want to come for shabbos channukah?
P.P.S. I was thinking of cooking 2 ducks as well so that we could play duck, duck, goose ;-)

You can get lots of geese here Mendy! I actually probably have two in my freezer right now. The storekeeper, Motti, is Israeli, and didn't know if they're ducks or geese in English. I'm pretty sure they're geese. Enjoy!
